Aquaculture scientist Nick King of the Cawthron Institute holds Greenshell mussels – a different family in each hand – at the institute’s hatchery at The Glen, near Nelson, in 2006. The Cawthron Institute is a world leader in selectively breeding shellfish for characteristics such as faster growth, resilience to stress, improved survival rates, and shell shape and colour.
