Many small bakeries produce their own pies. While meat pies are generally pretty standard, some local specialties have evolved. McGregors Bakery in Palmerston, east Otago, is renowned for its mutton pies. The shape is like a large ice hockey puck. Although there is a hole in the top of the pie, the standard eating technique is to bite a hole into the lower crust to let the liquid fat run out, before biting into the spicy pie. Here, bakery owner Charlie Skevington eats one of his pies in 2005. At the time he had just sold production rights to the pies to his friend Bernie Sugrue, who shifted manufacture to Wānaka. Charlie explained that, over time, the fat content of the pies had been reduced to accommodate changing tastes.
