Jacqui and Phil Dixon, the owners of Sabato, stand in their shop in 2009. They opened Sabato, a specialist supplier of fine foods mainly from Italy, Spain and France, in 1993. Such a shop may have struggled to survive a few decades earlier when most New Zealanders had simpler tastes in food.
