In the first 50 years of New Zealand freezing works, from the 1880s to the 1930s, solo slaughtermen, who were highly skilled butchers, carried out all the operations on the carcass. The solo slaughtermen at the freezing works at Whakatū, Hastings, pause to pose for the camera in the 1920s or 1930s.
