Olive oil

Established near Martinborough in 1991, Olivo was the first commercial olive grove in Wairarapa. In 2006 it had 1,000 trees. The company produces extra virgin oil from a number of different olive varieties, mostly Barnea and Frantonio. The olives are pressed in a large cooperative press in Masterton. As with wine, the weather can affect the flavour, and stress on trees produces a more intense taste. Olivo has won several awards for its olive oil.
