Processing orange roughy

Workers process orange roughy, which pass along a conveyor belt. The fish are a distinctive bright orange, with large, bulging eyes. They are a deep-water species that were over-exploited in the 1980s. Allowable levels of catch in the 2000s were much lower than they were in the 1980s.
