Early 20th-century shoppers were not shielded from the source of their meat, unlike their modern counterparts who are presented with ready-cut and packaged meat. The man and woman behind the cash register are surrounded by an array of headless animal carcases, strings of sausages and joints of meat that have been chopped by the cleavers in the foreground. Just in case the shoppers needed reminding, a picture of the animals in life is displayed above the counter.
