Pheasant terrine

A terrine is a kind of cold meat loaf. This one is made from chopped pheasant meat, bacon, eggs, pistachio nuts, oranges, apricots, cream and thyme. The recipe is from Titoki Pheasants, a pheasant preserve between Lakes Rotorua and Rotoiti, which offers hunting opportunities for driven pheasants (birds flushed out of the scrub).
