Charles Royal

In 2012 chef Charles Royal was a leading figure in the movement to reinvent traditional Māori foods for modern and international tastes. This television advertisement from the early 2000s shows him using ingredients from the bush including huhu grubs, horopito leaves, and pikopiko (fern shoots).
