Orange roughy

Orange roughy

Deep-sea fishing developed in New Zealand in the 1970s, when species such as orange roughy (pictured), oreo dory, southern blue whiting and hake appeared in shops. In the 2000s, some orange roughy was sold locally as fillets, but most was exported to Australia and the United States. It has a white, mild-tasting flesh that can be used in a variety of dishes.
