Dairy factory at Rukuhia, Waikato, around 1907

Dairying expanded rapidly in Waikato in the early 20th century. In an era before motor transport and good roads, milk was best processed close to source at a skimming station, where the skim milk and the cream would be separated, and the cream transported to the factory for manufacture into butter.
