
If it was a man’s job to grow fruit, the woman’s job was to preserve it for later consumption. This involved boiling produce in sugar syrup in large preserving pans and then sealing it in glass jars. Since colonial times New Zealand pantries – like this one in the 1960s – were stacked with home-made chutneys and preserves. Preserving fell out of favour in the 1970s as household freezers became more common.
