
In New Zealand, mushroom compost is usually made from a mixture of wet straw, animal manure and gypsum (calcium sulfate). At Meadow Mushrooms in Christchurch, large piles of compost are mechanically turned regularly, to aerate the compost and maintain its temperature at 65–80°C.
