These flowering carrots have been grown for their seeds, not for their edible roots. Since the early 1990s vegetable seed production has become an important land use on the Canterbury Plains. Most of the vegetable seed is grown for overseas seed merchants. The Canterbury area produces about a quarter of the world's supply of carrot seed.
