Scots played a key role in the most important breakthrough in New Zealand’s 19th-century farming history – the meat-freezing industry. A Glasgow-based company owned the Totara Estate in North Otago, where the sheep were killed for the first shipment of frozen meat from New Zealand in 1882. On a hill above the surviving farm buildings is a monument to Thomas Brydone, one of the Scots who pioneered the industry.
