Processing Pacific rock oysters

Processing Pacific rock oysters

Workers break apart clumps of Pacific oysters that are moving down a conveyor belt towards a high-pressure washing zone. Cleaned oysters are graded by size and then prepared for sale. Some are sold alive in unopened shells, although most are presented in half-shell form, where the flat upper shell is removed and the meat remains in the concave lower shell.
