Apples and pears are grown on grafted rootstocks that control the growth of the tree. The part of the tree that bears leaves and fruit is known as the scion. This is grafted onto a portion of apple or quince stem that bears roots (the rootstock). In varieties where the scion and rootstock are not graft-compatible, a compatible stem (interstock) is grafted between the two parts.
